Buffalo Chicken Potato Skins

With my once obsession with buffalo sauce and potatoes, I create this amazing recipe.

Ingredients:
2 cooked idaho potatos
1 chicken breast cooked and shredded
1/2 cup of cheese
1 tsp of garlic
1/4 cup of buffalo sauce (less if you like light sauce)
1/4 cup of ranch

Instructions:
Bake the potatoes directly on the rack for 50 minutes. Poke with a fork to verify if they are done.

Boil your chicken on medium until its cooked. Shred it in a large bowl.

Add all other ingredients, besides the potatoes, to the bowl and mix well.

Take a steak knife and carefully cut an oval in the top of each potato. Now take a spoon and scoop out the desired amount of potato. So it can be filled with the mix.

Now add desired amount of chicken mix to each potato. 

If there is any mix left, it makes a great toasted sandwich.

Cook in the oven for 15-20 mins on 300. Cook until lightly browned.
